Elderberry a prolific berry that grows all over the West, a favorite for the elk in our area, they often get there before we do. Each fall we so into the mountains hand-pick elderberries, just after the first frost, when they are perfectly ripe. Then we juice them and store the juice to make this wonderful "old time" special, Dorothy's Elderberry Syrup. Described as a unique flavor, sweet but not to sweet!

I've had this as a topping on the Sawtooth Sourdough Pancakes and it is an incredible flavor combination.
